How to prepare Xanthan Gum

1. To make edible glue: mix 1/4 teaspoon of xanthan gom with 4 tablespoons of water. Let the mixture rest for 10-20 minutes until the gom is completely dissolved. The result is a clear, colourless edible glue.
2. To make gum paste: knead 5 g xanthan gom with 250 g fondant. Then let it rest for 20-30 minutes before using.
3. To make pastillage: mix 1 teaspoon xanthan gom with 100 g royal icing. Let it rest for about 1 hour before using it.
